Cajun Pork and Rice
Ingredients
1 1/2 tsp cumin 1 1/2 tsp chili powder 1 1/2 lbs boneless pork chops 1 can (14 oz) diced tomatoes 1 onion, chopped 1 rib of celery, chopped 1 green pepper chopped 1 carrot, chopped 1 clove garlic, minced 1/2 tsp hot sauce 1/4 tsp salt 1 1/2 cups instant rice, uncooked 1 cup chicken broth 1 tsp olive oil
Combine cumin and chili powder and season pork chops. Place chops in the bottom of a crock pot.
In a large bowl, combine the onion, celery, carrot, green pepper, garlic, tomatoes, hot sauce, salt and remaining cumin/chili powder mixture. Pour over the pork chops.
Cook on low for 5 hours or until pork chops are fork tender.
Add rice and chicken broth to the crock pot and stir, breaking up the pork as you go. Allow to sit on low for 5 -10 minutes.
Serve when rice has cooked and absorbed the broth.
