Cabbage and Carrot Slaw
Ingredients
1 head of red cabbage, shredded 4 carrots shredded 4 green onions, sliced thinly
Dressing:
1 tbsp Dijon mustard 1 clove garlic, minced 1/3 cup olive oil 1/4 cup apple cider vinegar 2 tbsp lemon juice 1 tbsp honey (I added 2) 1/4 tsp vanilla * 1/4 tsp chili powder salt and pepper to taste
Whisk to combine all ingredients. Pour over slaw and allow to sit in the refrigerator for at least an hour.
* vanilla is optional, but really does make a difference in the flavor!
