Butter Bean and Bacon Soup
This would go well with our 7-up biscuits.
1 lb butter beans (if dry then soak overnight, I used frozen) 1 onion, diced 2 stalks celery 2 tbsp fresh thyme or 2 tsp dried 3-4 cups chicken stalk 1/2 lb bacon, cooked and chopped (or 1 cup ham or turkey) 4 cups water (at least) salt and pepper to taste
Add all ingredients to a large dutch oven. Cook on med heat until soup thickens, and vegetables and beans are soft. Add more water if needed.
