2 bunches of broccoli (florets only)(5-6 cups broccoli florets chopped lightly) 1 large sweet vidalia onion medium diced 2 bags/bottles real bacon pieces 6 hard boiled eggs finely diced or chopped 6-8 Roma tomatoes diced in small cubes 1 cup finely shredded extra sharp cheddar cheese 1 cup diced yellow pepper 1 cup shredded carrot
Mix all together well in a bowl. Set aside .
In a food processor or bowl using hand mixer combine the following:
1 cup Mayo 1 cup Thousand Island Dressing 2 tablespoons Balsamic vinegar 2 tsps sugar
Mix well then add to the vegetables mixture and combine well making sure all is tossed and coated completely. Cover in plastic wrap or seal tightly in a container and refrigerate at least 4 hours before serving (**and I place it in the freezer for at least 10-15 minutes before serving to make it good and cold.**)
other tips for the salad you may enjoy I have tried:
Leave out the sugar and balsamic .
Use only the mayo or the Thousand Island
Add 1 cup of golden raisins
Add 1 cup of slivered almonds toasted
Add 2 cups of chow mein crispy noodles and toss right as you get ready to serve
