Breakfast Tater Tot Casserole
Ingredients:
1 cup chopped bacon (ham or cooked sausage) 1-2 cups shredded cheddar cheese 2 cups tater tots (frozen) 1 cup milk 3 eggs pepper
(I prefer the simple bacon and egg version but you can also add chopped onions, green pepper, mushrooms etc according to your own taste preference)
Layer the chopped bacon (or ham, sausage etc) on the bottom of a prepared 2 qt casserole dish. Layer the shredded cheese on top. Cover with tater tots.
In a small bowl beat eggs and milk until combined well. Pour over the tater tots. Sprinkle a little pepper over top.
Bake at 350F for 40-45 minutes (or until set)
This recipe can be easily doubled and cooked in a 9X13 pan.
