Bohemian Banana Bread
Oh boy! I made this a few days ago, and Mr Mom has put in an order for another batch. I'm going to double the recipe this time. I think this one is at the top of my banana bread recipe collection now -- Ive got quite a few. If you don't want to use the rum, use apple juice to replace it. Thank you Lori for sending it on to me. It's a keeper!
2 c flour 3/4 tsp baking soda 1/2 tsp salt 1 c sugar 1/4 c butter, melted 2 eggs 3 mashed bananas 1/4 c plain yogurt 3 tbsp rum 1/2 tsp vanilla 1/2 c coconut
1 tbsp coconut 1/2 c powdered sugar 1 tbsp water or lemon juice
Mix together flour, baking soda and salt. Set aside.
Cream together sugar and butter .Add in eggs, 1 at a time. Add in banana, yogurt, rum and vanilla. Mix well. Add in flour mixture. and stir until moistened. Do not over beat. Add in coconut.
Pour batter into prepared 9x5 loaf pan. Sprinkle 1 tbsp coconut on top.
Bake at 350 for 1 hour. Allow to cool slightly in the pan before turning on to a baking rack.
Mix together powdered sugar and lemon juice (or water) and drizzle over the loaf while its still warm.
