Blueberry Hill Bread
Ingredients
3/4 cup buttermilk (I made my own with regular milk, and a touch of lemon juice) 1 egg, beaten 1/4 cup light oil (sunflower, canola etc) 2 cups flour 3/4 cup brown sugar, packed 2 tsp baking powder 1 tsp baking soda 1/2 tsp salt 1/2 tsp nutmeg 1 cup blueberries, fresh or frozen, but thawed
Combine buttermilk, egg and oil in a bowl until blended. Add in flour, baking soda and powder, brown sugar, salt an nutmeg.
When mixture is completely stirred, gently fold in the blueberries (Tip: If you toss the blueberries in a little flour first, they will not sink to the bottom of the bread while baking).
Pour batter into a prepared 9x5 loaf pan.
Bake at 350 for 55 minutes. Cool slightly before removing to a rack to cool completely.
