Beef Enchiladas
Quick and easy enough to make at the end of a busy day.
Ingredients
3/4 lb ground beef 2 large peppers (red and green) 1 cup salsa, divided 1/2 cup Tex-Mex shredded cheese (divided) 1/4 cup Italian salad dressing 8 small tortillas
Preheat oven to 400F Spray 9x13 pan with baking spray.
In a large skillet, saute peppers and ground beef until beef is no longer pink. Drain off excess grease.
Add in 1/2 cup salsa, and 1/4 of the shredded cheese. Cook through. Remove from heat.
Spread a couple of tablespoons of salsa on the bottom of the baking pan.
Brush both sides of each tortilla with salad dressing.
Place 1/3 cup of filling in the center of each tortilla. Roll and place in the pan, seam side down.
