This is a very simple midweek meal that is quick to prepare, and affordable for even the tightest budgets. This meal cost me $1 a serving. Feel free to switch out the vegetables for your family favorites.
1 lb lean ground beef 1 small onion chopped 1 15 oz can hominy 1 15 oz can baked beans 3/4 large can crushed tomatoes salt and pepper to taste
Brown beef in skillet with chopped onion. Drain meat and put back in the skillet.
Add hominy (drained), baked beans, 3/4 of a large tin of crushed tomatoes. Heat thoroughly.
