Bean and Pepper Salad
Thank you to Karen Emerson for this salad recipe. Karen says: I made this last weekend. It is very good. I could have eaten the whole bowl by myself.
1 can pinto beans, rinsed 1 can black beans, rinsed 1 can kidney beans, rinsed 1 small can corn, rinsed 1 yellow pepper, diced small 1 red pepper, diced small 1 orange pepper, diced small 1 jalapeño pepper, seeded and diced small 1/2 medium red onion, diced small 3 T chives
3 T olive oil 3 T Apple cider vinegar 3 T sugar 1/2 t cumin 1/2 t garlic powder Salt to taste
