BBQ Chicken and Ribs
This cast iron braising pan is what I used to make this recipe.
This is a great recipe for making in the oven, or on the stovetop in your dutch oven, but it can also be made in your cast iron pot while camping. (I halved this recipe but I'm sharing the full recipe below)
2 lbs beef short ribs 2 lbs country pork ribs 2 pounds chicken pieces 2 onions, chopped fine 2 tbsp oil 2 cups water 1 cup vinegar 4 cups ketchup 1 cup brown sugar
Season ribs and chicken with salt and pepper.
In dutch oven, saute chopped onion in oil. until translucent.
Add in water,. vinegar, ketchup and brown sugar. Cook on low boil until slightly reduced and thickened. Stir occassionally.
Add in ribs, and cook covered on low for one hour. Add in chicken pieces and cook another hour.
