Bavarian Pot Roast
There's nothing like a great pot roast to come home to after a long day out of the house. This is a great weekend meal as well -- do your chores and errands and then have a great dinner to sit down an enjoy with your family.
3 lb boneless chuck roast 2 tsp oil 1 1/4 cup water 3/4 cup beef broth * 1 (8 oz) can tomato sauce 1/2 cup onion, chopped 2 tbsp sugar 1 tbsp vinegar 2 tsp salt 1 tsp cinnamon 1/2 tsp ginger (ground) 1 bay leaf 1/2 tsp pepper potatoes and carrots if desired cornstarch slurry
*Beer can be substituted for the beef broth if desired
In a large skillet, sear each side of the pot roast in oil.
Transfer to the crock pot. If desired, you may add potatoes and carrots to the pot.
In a sauce-pan combine all of the remaining ingredients except for the slurry. Bring to a boil and then pour over the roast.
Cook covered on low for 6-8 hours. Remove meat and vegetables and add cornstarch slurry (2 tbsp cornstarch + 2 tbsp water) to the sauce, cooking and stirring until it has thickened. Use as a gravy.
