We attended the Parker County Peach Festival this past weekend and brought home a bounty of fresh tree ripened fruit to use in a variety of recipes. This easy, flavour filled chicken recipe was the first one we tested out.
Verdict: It's a keeper! We're going to try it next time using the crockpot.
Ingredients
4 chicken breasts 3 fresh peaches, peeled and chopped 1/4 cup butter 1/4 cup honey 1/4 tsp pepper 1/4 tsp ginger 1 tsp salt 2 tbsp brown sugar
Instructions
Heat oven to 425.
Melt butter in microwave and add in salt, pepper, ginger and honey. Place in the bottom of a baking pan.
Add chicken to the pan, making sure to coat the both sides of the pieces with the butter/honey sauce.
Bake for 10-15 minutes.
Take out of the oven, and add peaches and brown sugar on top.
Reduce oven to 350F and place chicken back inside. Cook for another 15 minutes or until chicken is done.
