Baked Chicken with Pecan Stuffing
Ingredients
1 small onion, chopped 3 stalks celery, chopped fine 1 apple (tart is best (peeled, cored and chopped) 2 tbsp butter 1 tsp salt 1/2 tsp sage 1/2 tsp pepper 3/4 lb dried bread cubes (I used pre-seasoned bread crumbs/cubes and omitted the salt, pepper and sage above) 3/4 cup chicken broth 1 egg, beaten 2/3 cup chopped pecans 1/2 cup raisins 4 chicken breasts 1/4 cup apple jelly 1/8 tsp cinnamon 1/8 tsp sage
Saute onions, apple and celery in butter until onions are translucent.
In a large bowl, mix the bread crumbs, spices and apple/onion/celery mixture. Add beaten egg and chicken broth and mix until everything is combined and moistened. Add in pecans and raisins. Mix again.
Spread stuffing in the bottom of a 9x13 baking pan.
Season breasts with salt and pepper and place on top of the stuffing mixture.
Bake at 400F for 40 minutes.
Melt apple jelly and add in sage and cinnamon. Baste chicken breasts with the mixture well. Sprinkle a few chopped pecans on top and return to the 400F oven for 15 more minutes.
