Bacon Cheddar Zucchini Muffins
Another great way to use up your zucchini harvest!
1 3/4 cup flour 1 1/2 tsp baking powder 1 tsp salt 1/4 cup butter, melted 1 egg 1 cup milk 3/4 cup shredded cheddar cheese 1 clove of garlic, minced .1 cup shredded zucchini 1/4 cup shredded parmesan 3 to 4 slices of bacon, crumbled
Preheat oven to 350F.
Prepare a 12 cup muffin tin with baking spray.
In a bowl combine flour, baking powder and salt.
In a second bowl combine egg, milk, garlic and melted butter.
