Autumn Chicken
It was a wet, blustery day today and I wanted to cook something hearty that would fill the house with warm aromas from my kitchen. This was the perfect dish. Mr Mom inhaled his. Serve over mashed potatoes for the perfect comfort food dinner! Ingredients
4 boneless chicken breasts cut into portions 1 tbsp olive oil 2 apples, peeled, cored and chopped 1 onion, chopped 2 cloves garlic, minced 1/3 cup BBQ sauce 1/4 cup apple juice 1 tbsp honey
Brown chicken pieces in a skillet with olive oil. You do not need to cook through. Remove and place in a small dutch oven. Cover the chicken with the apple pieces.
In the same skillet, saute the onion until translucent. Add in the garlic and saute a minute or so more. Add in remaining ingredients and heat through. Pour over the chicken and apples.
Bake covered, at 350 for 30-45 minutes (depending on the size of your chicken pieces)
*you can also make this in the crock pot. Assemble the same way, and cook on low for 4-5 hours.
