Aussie Lamingtons
Thanks to Stacey Messina Weiss for this great holiday dessert from Down Under. She says:This recipe came from a friend of mine in Australia!! They are delicious!!!!
1 box yellow cake mix 1 bag semi sweet chocolate chips 1 bag sweetened shredded coconut 1 T shortening
Prepare cake mix as directed in a sided cookie sheet (the higher the sides the better). Do not use a 9 x 13 pan as this will make them too thick. Let cake cool completely.
Set aside. In a medium size bowl, put the chocolate chips and shortening in. Microwave for short times and stir until melted (careful not to burn). You can also use a double boiler. Keep the chocolate warm.
Cut the cake into 2 " squares. Place to coconut in a plate. Place cake pan, chocolate, and coconut in that order on the table or counter. You'll need a cooling rack so they can drop after done.
Using a toothpick, pick up a cube of cake and entirely coat in chocolate. Sprinkle coconut evenly over the chocolate and place on rack.
Repeat these steps until cake is gone. Of course, eat a few cubes yourself!
When chocolate is set, store in airtight container.
