Apple Fritter Bread
Ingredients
1/3 c brown sugar 1 tsp cinnamon 2/3 c sugar 1/2 c butter, softened 2 eggs 1 1/2 tsp vanilla 1 1/2 c flour 1 3/4 tsp baking powder 1/2 cup milk 2 apples, peeled and chopped - I used Gala but any kind would do 2 tbsp sugar and 1 tsp cinnamon (for apples)
Glaze:
1/2 cup of powdered sugar 1 tbsp milk
Directions
Preheat oven to 350. Prepare a loaf pan with cooking spray.
Mix together brown sugar and 1 tsp cinnamon in a small bowl, and set aside.
Combine chopped apples with sugar and cinnamon and set aside.
In another bowl, cream together sugar and butter until smooth. Add in eggs, one a time. Add in vanilla.
In a third bowl mixture flour and baking powder. Add it to the creamed mixture. Add in milk and continue to mix until smooth.
Pour 1/2 of the batter in the loaf pan. Add 1/2 of the apples, pressing them down slightly into the batter. Sprinkle 1/2 of the brown sugar mix on top. Repeat the layers one more time.
Swirl the layers together by dragging a knife through briefly.
Bake for 50-60 minutes, or until the center is set and an inserted toothpick comes out clean.
Allow to sit for 15 minutes or so before removing. This is important or the layers may separate. Drizzle glaze over the top, if desired.
