Apple BBQ Pulled Chicken
This would go well with our 7-up biscuits.
2 lbs chicken breast, skinless, boneless 2 cups apple juice or apple cider 1 bottle (regular size) of your favorite BBQ Sauce (I used a Jamaican Rum BBQ sauce) 1 onion, sliced thin 1 apple, julienne sliced
Place chicken in the crock pot. Mix together apple juice and BBQ sauce and pour over the chicken.
Cook for 8 hours on low.
Remove chicken from sauce and shred with 2 forks. Add 1/2 cup or so of the sauce from the crock pot to moisten.
In a skillet, saute apple and onion slices together. When cooked, toss with the chicken. Serve on buns.
