Amish Meatloaf
This would go well with our 7-up biscuits.
Ingredients
2 lbs ground beef 1 1/2 cups crushed butter crackers (original recipe calls for 2 1/2 but I prefer a meatier meatloaf) 1 small onion, chopped 2 eggs, beaten 3/4 cup ketchup 1/4 cup brown sugar 2-3 slices of bacon, raw
Sauce:
1 cup ketchup 2 tbsp vinegar 3/4 tsp salt 2 tbsp yellow mustard 1/2 cup brown sugar
Instructions:
Combine all meatloaf ingredients, except the bacon. Mix well until everything is incorporated.
Press the meat mixture into a 9x5 loaf pan, or (as I prefer) shape it into a loaf on top of a foil lined baking sheet.
Lay the bacon strips over top of the meatloaf and bake at 350 for 45 minutes.
While meatloaf is baking, combine the sauce ingredients in a bowl. After the meatloaf has cooked for 45 minutes, remove and baste with the sauce. Return to the oven for another 15-20 minutes.
Allow to sit for a few minutes upon removing from the oven before slicing.
