Sweet and Sour Pork with Pineapple and Pomegranate
1 lb boneless pork cut into cubes 2 T oil 1 can (20 oz) pineapple chunks (reserve 1/3 cup juice) 1/4 cup cider vinegar 1/4 cup soy sauce 3-4 T sugar (to taste) 1 T cornstarch w 2 T water 3 stalks celery thinly sliced 1/2 small onion, chopped 2 sweet bell peppers (any color), chopped 2-3 T pomegranate seeds
Brown pork pieces in oil. Remove from skillet, and set aside.
Saute chopped vegetables lightly in the same skillet. Set aside.
In a saucepan combine pineapple juice, vinegar and soy sauce. Heat through, and then add slurry made from water and cornstarch. Stir until thickened. Remove from heat. Add sugar to taste.
In a prepared 9x9 casserole dish combine pork pieces, pineapple, pomegranate seeds, vegetables. Add sauce and toss gently until everything is coated.
