1 ½ lb ground beef 1 med onion chopped 1 large green pepper chopped ½ cup thinly sliced carrots salt and pepper ½ cup salsa 1 can corn, drained 1 can diced tomatoes, drained 1 can pinto beans, rinsed and drained 1 tsp cumin 1 tsp oregano ½ cup water 1 tbsp beef boullion granules ¼ to ½ tsp chili powder 1 4 oz can green chiles (optional) 1 tbsp cornstarch
4 cups homemade, creamy mashed potatoes
Garnish: paprika and oregano ½ cup Tex-Mex cheese
Brown the ground beef with onions and peppers. Drain.
Add in all other ingredients except for mashed potatoes. Cook until sauce has thickened. Pour into a 9 inch casserole dish.
Top with mashed potatoes. Sprinkle paprika and oregano on top. Bake for 30 minutes at 350F.
Add cheese to the top, and bake another 10-15 minutes.
