Baking In A Tornado I just love this casserole. It uses fresh Summer Squash, fresh Zucchini and fresh Tomatoes. It's a side dish but I can eat it for dinner.

We use left over meat sauce from spaghetti, roasted red peppers, cheese, olives, the zucchini that was scraped out that we cook up in oil and seasonings. Tina Archambault I just made stuffed zucchini the other day! You cook your ground beef with onions & garlic, once done stain it, put it back in your pot, add fresh diced tomatoes, peppers, fresh parsley, basil & oregano, a bit of cayenne pepper & chili powder, let simmer. Cut zucchinis lengthwise, scrape out middle so it's like a bowl. Chop what you scraped out into small pieces & add to the meat & veggie mix & let simmer. Stuff zucchinis with mixture & top with cheese. Bake at 350 for 10 mins & broil for about 2 mins.

Put a scoop of potatoes on the plate, then the zucchini and then the steak with gravy sauce on the top. I wish I knew the exact recipe. But its a thought. Drain liquid off the cooked zucchini, add spaghetti sauce, the ground beef, noodles, copped onions, bell peppers and some Italian seasonings. Simmer until zucchini is completely done. When serving top with a bit of Parmesan, Romano or mozzarella cheese. Sorry I don't have any exact measurements here, I cook my batches in a large canning pot using the huge zucchini I grow, it takes a pot that big just to steam them down! Linda Walter try to buy straight zucchini. it is easier to core out. I have made these for so many years, I have no recipe. cut just a tad off each end of zucchini. the cut the zucchini in half. take a corer, and core out the inside flesh of the zucchini. do, not, cut into the skin. I guess I usually use 6 of the, which makes 12 halves. cause they are so foo leftover. set up each zucchini in a large pan. line them up. so the are standing. one or 2 shakes of garlic salt inside each I/2. the squeeze fresh lemon juice inside each core. . now you can choose beef or my preference is ground lamb....mix the meat up with salt and pepper and a good hand full of rice. take some meat and roll it into a cylinder, and put it inside the core, pushing down so the meat is stuffed inside. continue till all are stuffed. if you have meat left, make small meat balls, to cook in pan. now you can lay the zucchini down. add a very large can of diced or crushed tomatoes. Put lid on pan and cook on low/med heat till done. maybe 45 minutes. the leftover flesh of the zucchini in a saucepan. ad a can of stewed tomatoes and a small diced onion and cook on low heat, stirring every so often......leftovers just cook to reheat in saucepan.

Preheat oven to 425. Combine first 5 ingredients in a medium bowl, stirring with a whisk. Place milk in a shallow bowl. Dip zucchini slices in milk, and dredge in dry mixture. Place coated slices on an oven proof wire rack coated with cooking spray; place rack on a baking sheet. Bake at 425 for 30 minutes or until browned and crisp. Serve immediately.

Kathy Alderman Sloane I like to shred them on a grater drain the liquid from them then place them in a frying pan with chopped onions olive oil garlic and one or less of a seeded jalapeno pepper fry it up then toss with cooked spaghetti noodles drizzle with more olive oil and shaved Parmesan and a squeeze of lime or lemon juice. Its light and refreshing and you don't feel like undoing the top button of your jeans when your done like spaghetti makes you feel like doing. Caroline Wilson- Sudduth Use a vegetable peeler and make long strips like noodles and sauté with onion and garlic with some olive oil and serve your favorite spaghetti. Erin Arafat I make Kowaj (Syrian dish) Hama-style with zucchini and other fresh veggies. Cut the zucchini into bite size pieces, same for some eggplant and potato and mix them into a deep 8x12 baking dish. Generously mix in cut tomatoes (3-4). (You could add onion if you like too) Add small walnut sized bits of ground beef/lamb and salt and pepper to taste. Randomly drop about 5-6 tables spoons ghee (clarified butter) and bake on 350 until everything is cooked (mainly potatoes) ~45 minutes, depending on your oven. You can adjust the heat as needed. This is a really easy and tasty dish! JoEllen Hill I shredded the veg then I scooped them with a half cup measured scoop and placed them in muffin cups. When frozen I popped them out and will use them in all recipes like muffins cakes loaves of zucchini bread etc.
Sharon Howard Grate 1 1/2 c zucchini, 3/4 c grated carrot, 1/2 onion diced. Add 1 egg and 1 oz diced American cheese along with 1 slice of bread toasted and crumbed. Mix well and place in a small casserole dish. Top with another slice of bread crumbed and mixed with 1 tsp melted butter Bake at 350 for about 35 to 40 min until set.
Jessica Lahaza Ohh... My grandma takes a large zucchini, a cooked pound of hamburger, a box of chicken stock, 2 cans of diced italian style tomatoes, and 2 lipton rice sides (the herb butter kind). Cook this together. It tastes amazing. I also like Cheesy Zucchini Casserole Nana Patti Gregory Cut them up and ROAST a big pan of them....love zucchini and lotsof veggies roasted. Drizzle with olive oil and sprinkle with salt, pepper, garlic powder and a few sprinkles of red pepper flakes.....yum....so good and so easy. Eat them and/or freeze the for later. I use the frozen ones later in my homemade spaghetti sauce and blend it all with the immersion blender.
