Mini Mexican Meatloaves
This cast iron braising pan is what I used to make this recipe.
This recipe is quick, easy and diabetic friendly. You can easily double the recipe as well if you're family is larger. If you prefer to make a full sized loaf - double the recipe and bake at 350F for 90 minutes.
1 lb ground beef 1/2 cup salsa (reserve to 2 tbsp) 1/2 cup bread crumbs 1 egg
Combine all ingredients, except for the reserved salsa.
Roll into 6 balls and place in muffin tins. Brush tops with reserved salsa.
