Every week our local grocery store (Albertson's) has three different choices in their meat department for Buy One Get Two Free specials. They often have pork chops and I end up with 3 packages for about $6. I used one of those packages to make tonight's dinner, which when all totaled fed the both of us for $3.50. Can't beat that!
Ingredients
4-6 pork chops 1 tbsp oil 1/2 cup of orange juice (or reserved juice from tin of mandarin oranges) 1/4 cup water 3 tbsp brown sugar 2 tbsp lemon juice 1 tbsp cornstarch 2 tsp dry chicken bouillon granules 1 can mandarin oranges (11 oz) 1 sweet pepper, sliced (green, red whatever you prefer) salt and pepper
Rice or mashed potatoes
Directions:
On a skillet, brown both sides of pork chops in oil. Remove and set aside.
Add orange juice, lemon juice, brown sugar and chicken bouillon granules to the skillet.
In a small cup, mix the cornstarch and water, add it to the mixture as well. Cook on low and stir until sauce begins to thicken.
Add pork chops back into the pan and cover with a lid. Cook on low for about 20-30 minutes until pork chops are cooked through and tender.
Add the drained mandarin oranges, and sliced peppers and heat through.
