We cooked our meal on the grill last night. The recipe was for an all in one foil pack dinner. It was quick, easy and delicious! And clean up was a breeze too!
1 large ham steak 1 can (15 oz) pineapple chunks, reserve liquid 2 large sweet potatoes, peeled and chopped 1 small red onion, chopped 4 tbsp butter 4 tbsp brown sugar red pepper flakes (optional) Salt and pepper
Cut ham steak into cubes.
Divide ham, onion, pineapple chunks and sweet potato pieces between two double layered pieces of tin foil. Dot each foil portion with 1 tbsp of butter and brown sugar each. Drizzle a teaspoon of the reserved pineapple juice if desired.
Salt and pepper to taste. Add red pepper flakes for heat if preferred.
Double wrap and seal the foil packets and cook on a hot grill or campfire for 30 minutes or until tender.
