Root Beer Cake
A great little dessert cake, with the wonderful flavor of root beer in both the cake and the frosting. Your family will love it!
1 cup sugar 1/2 cup butter 2 eggs 1/2 tsp vanilla 2 cups flour 1 tsp baking powder 1 tsp salt 2/3 cup root beer
1/4 cup butter, softened 2 cups confectioner's sugar 2 tbsp milk approx 1/3 cup rootbeer * 1/2 tsp root beer extract if desired
Mix all ingredients for the cake together in one bowl until smooth. Pour into a prepared 8x8 baking pan. Bake for 30-35 minutes until cooked through and an inserted toothpick in the center comes out clean.
Allow the cake to cool before frosting.
To make the frosting: cream together the butter, milk and icing sugar. Add enough root beer to the desired consistency. If you want a deeper root beer flavor, add root beer extract.
