1 pound dry pinto beans (2 1/4 cups approx) 2 large green peppers, chopped 3 large onions, chopped 1 1/2 tablespoons oil 2 1/2 pounds hamburger 1 pound sausage 2 teaspoons salt 1 1/2 teaspoons pepper 1 1/2 teaspoons cumin seed 2 cloves garlic, minced 1/2 cup parsley, chopped 5 cups canned whole tomatoes 1-2 tablespoons chili powder
Wash beans, check for rocks and debris. Put in bowl, cover beans with water, and soak overnight.
The next day, rinse well and simmer beans in water until tender.
Saute green pepper and onions in oil until tender and add to beans.
Fry hamburger and sausage until done, drain fat, and add to beans along with the other ingredients except chili powder. Add chili powder in small amounts until the desired heat is reached.
Cook 1 hour covered.
This makes a large batch. Put in containers to freeze for a fast meal later.
