Pepperoni Pizza Biscuits
2 cups of baking mix (you can make your own from this recipe) 1/2 tsp Italian seasoning 2 tbsp cold butter, cut into small pieces 2/3 cup milk 1/2 cup finely chopped pepperoni 1/4 cup chopped sun dried tomatoes 1/2 cup shredded Italian blend cheese
Preheat oven to 425F.
Prepare baking sheet with parchment paper or baking spray.
Combine baking mix with Italian seasoning in a large bowl. Cut in cold butter pieces with a fork, or pastry blender, until it resembles crumbs.
Slowly add the milk until the the mixture creates a sticky dough.
Add in pepperoni and tomatoes.
Pat dough on lightly floured board, about 3/4 of an inch in thickness. Cut out with a 2 1/2 inch biscuit cutter (I use an inverted glass). Place biscuits on cooking sheet .
Press one tablespoon of the shredded cheese onto the top of each biscuit.
