Pecan Date Loaf -- Diabetic Friendly
This diabetic friendly loaf doesn't skimp on flavor. It's wonderful gift wrapped up in festive cellophane for a hostess gift, a great addition to a breakfast buffet or a tea/coffee party. Be sure to make two so you have one for yourself to nibble on with your mid morning coffee. 1 cup butter 1/2 cup sugar substitute (I used Splenda) 1 tsp vanilla 2 cups flour 2 tsp baking soda 1 egg 1/2 tsp cinnamon 1/2 tsp ground cloves 1 1/2 cups unsweetened apple sauce 1 cup chopped pecans 1 cup sliced dates
Cream butter until light and fluffy. Add in egg, vanilla and sugar substitute. Mix well.
Mix together the dry ingredients (flour, baking soda and spices). Add to butter mixture. Mix until well blended.
