Chicken and Sausage Soup
8 cups chicken broth 6 sausage links (any type you prefer) cooked and chopped 1 onion, chopped 2 green peppers, chopped 1 tbsp minced garlic 1 cup carrots, chopped 1 (28 oz) can diced tomatoes (drained) 4 cups chicken breast, cooked and chopped 1 pkg of 15 bean soup mix (3 cups mixed beans) soaked overnight
Soak beans overnight.
In a large stock pot bring chicken broth to a boil, add in sausage, carrots, onion, green pepper, tomatoes and garlic.
After its been brought to a boil, simmer for about an hour.
Add beans (drained) and bring to a rolling boil, before putting it on simmer. Cover and cook until the beans are tender. This depends on how long you soaked the beans, but it should take a couple of hours. When the beans are tender, add the chicken pieces, and continue to simmer for another half hour.
